I updated my spirit gt to the version spirit-3.6.5r3-win. (why in this page versione 3.6.5 it is not found? https://www.spirit-system.com/phpBB3/viewforum.php?f=19)

What should I do?
install 3.7.0 and after 3.7.1
or directly latest version?

As I best understand it, I believe you update directly to the latest firmware version WITHOUT having to conduct incremental updates.

If i use governor spirit gt and i have hobbywing HV 130A V4 to decrease spoolup (tail kick) what do i need to change?
I have to change the parameters in the software spirit or in the program card esc?

You will need to modify very likely ESC settings. Spirit has very limited possibilities to limit tail kick. The ESC is responsible for smooth spoolup. So you have to set Spoolup Power in the ESC - described in the HobbyWing manual.
It also depends on ESC mode that is set. Each ESC is different in this area. Very often spoolup is worse when using external governor, because ESC is turning off soft spoolup. But with HobbyWing it should be possible to at least minimize it even with external Governor.

only helicopter linear throttle is good (fixed wing has spoolup much faster)

As I best understand it, the soft spool-up "tail kick" is a known issue with certain HobbyWing ESCs.
