I have been looking at the FrSky Taranis Q X7.
Lots to learn for sure. But first gumby question - what receiver and wiring strategy is the best choice for a 500 size heli?
I know it would be one of the S.Port receivers. But would it be the X6R using S.Bus or the S6R and regular wiring loom, or something else?

you can get basically any S.Port compatible receiver from FrSky.
But I highly recommend one with S.Bus port.
X6R is very good choice.
Regarding configuration you can use one we have for Taranis X9, but some switches must be remapped in the Companion software.

You can just start the Companion software, open it and import.
It is possible you will need to recalibrate the sticks.
