No, if banks are disabled, then they can't be switched in any way.

I guess there's no way to switch banks in the software?

Actually if the banks are enabled and the software is connected, you can only switch through the software and not from the TX. You will be able to see in Diagnostic which Bank the TX is commanding, but the actual current bank can only be switched from the software.

Check, will to be sure, copy bank 0 to the others. Is there a copy function?

The very first time you activate banks it will copy over from 0 to 1 and 2, IIRC.
There is a Bank Comparison feature in the Backup tab (only visible if Banks are active).

Are you able to see Requested RPM/Current RPM with the first spoolup too?
Just home, and yes during the fast first spoolup there are numbers showing in actual and requested.

For ESC/GOV troubleshooting and understanding, it help me a lot to plug a very fast Servo with Y-Cable onto ESC Port to see whats going to ESC.
If you disable Governor in Spirit, you see whats coming from TX direct, mapped 0% to min Range and 100% to max Range. Make sure ESC is not connected if in Airplane mode and disabled Governor in Spirit.
If you enable GOV, you can see Spoolup Rampup jump and Initial Spoolup ramp.

Yes I do that also.
I tried a new tx model, (ps I have to reverse thr in my transmitter to get the direction ok)
I tried thr frequency 60hz, 120hz, 200hz
The problem stays. If I turn off gov I get perfect control from 0 throttle (motor is off) to 100% (yellow led on yge fully of which means full throttle)
I really don't know what else to do, im sorry but there must! be something weird in the spirit. First spoolup is bailout (numbers raise fast in the gov menu) all spoolups after that are fine.

Uploading a new vid Zexxs, of the first spoolup, and then a second with the gov menu onscreen. Its showing some weird behaviour. in aprox 16mins
