I'm running currently at 7 and it feels pretty good for my KST DS215MG. How low can I go? What happens if it's set too low?

You can go to 0, rudder stopping may not be too good, but if servo is very fast it can allow you to increase gyro gain.
If it is too high then you can get very fast oscillations in a demanding manouvers.

Thank you. Can you quickly explain what exactly is happening when the setting decreases? By the setting title, it seems that the servo will react quicker, but why do slower servos need even more delay?

Yes it would be interesting to know how to tune in more detail.
The manual mentions (p50): Very Fast 0..5 (0.04s/60°), Fast 5.. 15,... I'm wondering what it is like in s/60° on all these ranges.
In the manual its also written "brushless 0..2", is this regardless of it's speed?
Thanks for more clarification, Adrian
