Will check on my models this WE, but I do think the Spirit will not allow you a full travel on the tail servo in normal mode. It keeps some margin for itself.
Concerning your OTX programming, here are few comments:
- No need to specify "No Trim" everywhere. Disabling the trim in the FM0 (Flight Mode 0 = default one) will do the job.
If you are a "visual" guy, you can check my diagrams just here: FrSky Taranis - OpenTX data flow diagrams. It can very helpful to understand the data flow inside OpenTX.

- I don't understand your CH05. Whatever is the SB switch position, the channel 05 will always send -25%.
- When a channel needs to be reverted, it is a good practice to use the "direction" parameter in the OUTPUTS/SERVOS menu. This is exactly the purpose of this parameter (revert channel direction). FYI, with an airplane model, the trim will work in the wrong direction if you are using a -100% ratio in the mixer!!

Concerning the LUA scripts, I guess your are using those ones ? → OpenTX Integration - 2 Installation
I don't have a clue why it is not working.

If you are using the FrSky integration cable it should work... All 3 wire are soldered? (the cable does include a transistor which need a power supply)
Is the cable plug in the right direction? (It is not "swappable", the shorter lead of the cable must be connected only to the RX).
By the way, if your are using the "inverted S.Port" instead the "S.Port" port, the integration cable is not required. A straight connection should do the job (I'm not 100% sure, I never tried myself). It is worth to try.
